Abstract:

The Chinese diet culture is an important component of Chinese traditional culture; hence the names of Chinese dishes concentrated the broad and profound of Chinese cuisine and local characteristics, and reflect that the Chinese nation have a long history of colorful food culture. Reading Chinese food menu for foreign guests, who come to the Chinese restaurant, is the first step for them to know the Chinese diet culture.
Therefore a very good Chinese food menu plays a very important role in introducing and promoting the Chinese diet culture, which can help foreign guests know China and Chinese people. Chinese diet culture is rich in content, the names of dishes are various, which brought a lot of trouble to hotel’s translation work. Mistranslation is a common phenomenon. This article starts from the current problems existing in the Chinese dishes translation to analyze the variety of the forms of Chinese dishes, and put forward effective translation methods, so as to provide some reference for Chinese dishes translator.

摘  要：

中国饮食文化是中国传统文化的一个重要的组成部分，中餐菜肴的名称浓缩了中国博大精深的烹调技艺和地方特色，折射出中华民族源远流长绚丽多姿的饮食文化。对于来到中餐馆吃的外宾来说阅读中餐菜单是他们了解中国菜肴欣赏中国饮食文化的第一步。
因此一份英译很好的中餐菜单对介绍和宣传中国的饮食文化帮助外宾了解中国和中国人民有着一定的重要作用。中国的饮食文化内容丰富，菜名繁多，这给很多的酒店、旅馆的菜名翻译工作带来了诸多麻烦，乱翻、错翻的现象十分常见。本文从目前中餐菜名翻译中存在的问题入手，分析了中餐菜名的多种表现形式，并提出行之有效的翻译方法，以期为酒店、餐饮等服务业提供一些借鉴或参考。
