摘要

为了在2020年实现旅游强国的目的,国家旅游局在2003隆重推出了“烹饪王国游”,以帮助国内外游客更好的了解中国饮食文化和各地文化的不同特色。中华民族信奉“以食为养”,相信适当的饮食比药材更能治愈身体的疾病。中国饮食也蕴含着中国人认识事物、理解事物的哲理。而在西方人看来,饮食只是一种给身体补充能量的形式,让身体能像机器一样运行起来。菜名作为一种传播信息和传递文化的手段,在饮食文化对外交流中具有一定的重要性。而如今,菜名翻译不当的问题依然存在。例如:一名多译,词不达意,语法错误,文化缺失。要实现菜名翻译的实用目的,其功能的分析,翻译技巧也都不可忽视。本文介绍几种翻译技巧:突出原材料和烹饪方式,突显地方特色,直译特色菜肴,简化药膳名称,保留典故与传说。一个好的菜名翻译处理,不仅能通过口碑及文字将中华民族的优秀的饮食文化传播出去,也能提高游客的食欲,大大提高旅游的实用目的。由此可以促进和繁荣中外的交流和友谊。

Abstract

There is a Chinese old saying goes like this: food is the paramount necessity of the people. In the long history, after incessant exploring and innovating, there came into being a peculiar and gorgeous Chinese food culture. The rapid pace of economic globalization provides a wonderful chance to show the world Chinese history, cultures and the image of being a great power. The across-culture exchange cannot smoothly proceed without translation. There is no doubt that the well translated Chinese menus serve as the bridge connecting Chinese food culture and foreign friends and they shoulder heavy responsibility and play a significant role in transforming information and disseminating Chinese food culture to the outside world. However, there are ridiculous even horrible translations of Chinese cuisine names in some restaurants, which confused foreign friends when they ordering. It might restricts the transformation and dissemination of Chinese cuisine culture to the world even ruins the Chinese image of cultural power without paying attention to these poor translations. Therefore,studying on the appropriate approaches to translating Chinese cuisine names into English is important. This thesis introduces Chinese and foreign food culture and discusses some existing problems, and bring some skills in translating Chinese cuisine names into English.
