摘  要

中式菜肴拥有悠久的历史文化,自古以来中国人以食为天。吃是中国人的头等大事。中国菜名充满了中国人的智慧和幽默。随着中国的改革开放,中国经济实力增强,世界地位不断提高,中外交流频繁。中国菜吸引了大量的外国游客,然而很多低劣的中国菜名翻译给很多外国游客留下了不少的坏影响。外国朋友可以通过菜肴的名字了解中国菜肴的艺术和文化内涵,同时品尝中国美食的独特风味。中国菜肴名称的翻译一直是中国美食文化传播的一个重要组成部分。在翻译中国菜肴的过程中,译者需要对食材加工材料和烹制方法加以研究了解,找出对应的英语词汇,遵循一定翻译原则,运用相应的翻译策略进行翻译。菜名的翻译是一项特殊的翻译活动,它涉及到处理两种不同语言,文化和社会功能。论文主要研究中菜肴的命名特征以及翻译策略。

Abstract
     
Chinese cuisine has a long history, since ancient times Chinese people regard food as god. Eating is one of the most important things. Chinese dishes are full of Chinese people's humor and wisdom. With China's reform and opening up, China's economy have promoted greatly, so does the foreign exchange. Chinese cuisine attracted a large number of foreign tourists, but many poor Chinese dishes translation of Chinese dishes have left a lot of bad expressions o many foreign visitors. Foreign friends can learn the arts and culture of Chinese dishes by its translation, while enjoying the unique flavor of Chinese cuisine. Chinese translation of the name of the dish has been playing an important role in the spread of Chinese food culture. This paper is going to study the ingredients of materials and cooking methods, finding the corresponding English words with certain translation principles and appropriate translation strategies. Dish name translation is a special domain of translation, as it involves dealing with linguistic, cultural, and social features in both languages. In this paper, features of Chinese dish names are presented. Then some useful translation strategies are discussed in details.
