摘  要

中国菜名是悠久饮食文化的浓缩,菜名翻译必然离不开浓郁的传统文化。然而由于语言和文化差异,中国菜名很难与英语的表达方式实现对等,尤其是中国文化菜名。本文从菜名翻译的文化角度出发,进行深入研究。经过查阅大量的文献资料,本文归纳出六种文化菜名的翻译方法:直译法,描述法,直译法加注释,描述法加注释,音译法,音译描述法。同时列举了一些具有代表性的菜名,研究其文化内涵并总结出相应的翻译方案。一份好的英文菜单可以促进国际友人对中国的了解,更好地宣传中国传统文化和饮食文化,从而提高中国菜肴在国际知名度。菜名翻译是翻译研究界极具挑战的一个新领域,应予以足够重视以促进中国菜名翻译研究领域的深层发展。

Abstract

The dish name is an epitome of profound dietetic culture, so translation of dish name is related to rich traditional culture. These dish names not only reflect some basic information of a certain dish, including the variety of ingredients, cooking methods, color, aroma, taste, appearance, but also contain a lot of cultural elements such as dish initiators, original places, and auspicious words. But Chinese dish names are not equivalent to English expression due to great difference in language and culture,particularly Chinese cultural dish names. The paper will analyze translation of dish names from cultural aspect in-depth study. Through a substantial data access, the paper induces six special methods of translating cultural dish names:literal translation, description of dish, literal translation plus description of dish, description of dish plus notes, transliteration, and transliteration plus description of dish. In the meantime, the paper lists some representative dish names to study their cultures and summarize corresponding translation methods. All methods are used to express the essence of dishes and cultural characteristics of Chinese nation. A good English menu can promote foreigners’ understanding to China, publicize greatly Chinese traditional culture and dietetic culture and improve international profile of Chinese dishes. Translation of dish names is a new field full of challenge in translation studies and should be put more attention to it in order to promote development.
