摘 要

中华民族素享盛誉的传统烹饪技术,以其唯美和精湛高超的技艺驰名世界,同时它也是一种独特的文化现象,具有极高的艺术审美价值和文化价值。但令人尴尬的是,时至今日,海外中餐厅的发展却是步履维艰。作为海外华人的主要支柱产业和中华名族特有的传统,如何改变中餐在美国的尴尬地位已经成为了一个令人深思的话题。本文以饮食为研究对象,分别从中美饮食文化,中美人的性格,美国人对中餐的误解以及中餐在美国遇到的贸易壁垒等几方面来探讨中餐在美国受挫的原因,并且在前人研究的基础上,指出新的餐饮模式-美式中餐发展的可行性。了解中餐当前的处境以及提出新的解决措施能够促进中餐在美国发展,同时也能够避免跨文化交际中因不同的饮食文化观念而产生矛盾与冲突,增进中美双方的了解与沟通。

Abstract

The traditional cooking technology which enjoys the high reputation in China is famous for its beautiful and superb skill in the world. Also it is a kind of unique cultural phenomenon and it has a very high aesthetic value and cultural value. Yet the awkward truth is that the development of Chinese restaurant in overseas walks with difficulty at the present time. As the main pillar industry of new immigrants in the United States and unique tradition of whole China, how to change the awkward position of Chinese food in the United States has become a thoughtful topic. Based on the diet as the research object, this paper mainly makes a research on diet culture between China and the United States, the different characters of Chinese and American, the misunderstanding of American to Chinese food and the law obstacles of American government to discuss the setbacks of Chinese food in America and points out the development feasibility of Americanized Chinese food on the basis of previous studies. Understanding the present situation of Chinese food in United States and putting forward new measures can help to avoid the contradictions and conflicts brought forth by different food culture and values, and thus promoting culture exchange and development of the two countries.

1 Introduction
1.1 Background
With the economic globalization and the increase in overseas migration, Chinese food got great development in the United States. Nowadays, there are a lot of Chinese food restaurants in large cities such as New York, Washington D.C and so on, almost every household kitchen equipped with a wok. According to recent statistics, the number of Chinese food restaurants in the world were more than 200, 000, the number in U.S. were more than 46,000. The annual sales of restaurants reached 20 billion.  But in recent years Chinese food industry is facing serious difficulties. The selection activity of the Best Restaurant which organized by British authority food magazine was held in this summer, the Chinese restaurant was surprisingly eliminated.
