Abstract

China boasts its long history and profound culture. Food culture is an important part of Chinese traditional culture. Chinese food culture is featured, its art of sight, smell and taste as well as the environment to make it imaginative. It is the Chinese nation’s tradition, personality and also a part of etiquette. The culture-loaded words used in it are also the kernel of the food culture. It plays an important role in intercultural communication and also has very high value for research.
Menu, as an important part of Chinese food culture, has the typical cultural characteristics and culture-loaded words also. This paper starts with the research background of culture loaded words both home and abroad and gives a detailed introduction to the language and culture features of this kind of words in Chinese food. By adopting the Functionalist Translation Theory put forward by German scholar, the author of this paper attempts to explore suitable translation methods for the culture-loaded words with an example of the menu of “Tasty China House”.

摘  要
   
中国传统文化博大精深,源远流长。饮食文化是中国传统文化中极其重要的一个部分,中国饮食文化异彩纷呈,不仅要求菜品本身的色、香、味俱全,更要搭配用餐氛围产生一种情趣。它不仅是中华民族的传统,也是中华民族的个性,更是中华民族传统礼仪的代表之一。其中的文化负载词更是集饮食文化的精髓于一身,它在跨文化交际中扮演者重要的角色,具有很高的研究价值。
    菜谱作为中国饮食文化的重要组成部分,具有典型的文化特征,本身也是文化负载词。本文从国内外关于文化负载词的研究背景出发,详细介绍了中国饮食文化负载词的语言和文化特征,并结合德国学者提出的功能翻译理论,以近年来风靡海外的“Tasty China House”的菜谱为例,通过理论分析与实践相结合的方法,探讨了中国饮食文化负载词的英译原则和方法。
